My name is Paul Wallis the founder of Sugar² Squared.  My mother first taught me and my sisters how to cook and bake at a very young age, and I always enjoyed making my own treats and cookies during the holidays.  I really liked butter tarts as a child however the only ones I could find to eat were of the store bought variety and always only contained raisins.  As you can tell I'm not a big fan of raisins in my butter tarts, but to each their own.  Because of the lack of variety and quality I started baking my own butter tarts and treats around Christmas time every year, and I really enjoyed being able to experiment with different flavors, and recipes.  

When I'm not baking in my spare time I work full time as a nurse at Ontario Shores.  I also am an avid swimmer and runner, and I have completed many triathlons and marathons over the years.  When I find time to relax and unwind I also like to crochet, knit, read and play the odd video game
